Bannock Bread Pudding

A cinnamon-y, gooey, bannock goodness!
Prep Time 10 minutes
Cook Time 1 hour 10 minutes
Servings: 12 servings

Ingredients
  

  • 2 cups milk
  • 2 eggs
  • 1/4 cup salted butter melted
  • 1/2 cup granulated sugar
  • 1 tsp cinnamon
  • 1 tsp vanilla
  • 6 cups bannock cubes
  • 1 cup diced rhubarb or apples or fresh or frozen Saskatoon berries

Equipment

  • 1 Glass measuring cup
  • 1 Set of measuring spoons
  • 1 Large bowl
  • 1 Hotel pan or roaster

Method
 

  1. 1. In a large bowl, whisk together milk, eggs, vanilla, melted butter, sugar, and cinnamon
    2. Add fruit or berries and bread to first mixture and stir to combine
    3. Grease a hotel pan or roaster and pour in mixture
    4. Bake at 350 degrees for one hour until top is golden and interior temp is at least 200 degrees F
    5. Serve warm or let cool then refrigerate immediately
    6. Makes 12 large servings or 16 smaller
