- 1. For stinging nettles: wear thick gloves when picking, find a clean area that you know is not sprayed with any type of chemicals2. Cook in a minimum amount of water for a couples minutes (until soft). Cut finely using two knives or if you want a more pureed soup can use a blender to finely chop the nettles3. Boil chicken broth4. Separately, melt the butter and work in the flour. Whisk in the chicken stock then add chopped nettles, salt and pepper to taste5. Blend in the cream of your choice, add the egg and some bacon bits (if on hand but not necessary). Simmer for a short time - until the egg is cooked.6. Makes about 8 cups and can freeze. Very good and healthy!
Notes
This soup can be modified to an individuals taste/ diet - very easily adaptable (does not have to be flour for those with gluten issues, it can be made with many variations eg. vegetable broth instead of chicken, no bacon bits, very little cream, no egg, etc.
