Rose Hip Jam (LI KOOÑFECHEUR DI BATOOÑ'D ROOZH)

Rose hips have many medicinal benefits and have been used by Métis people across the nation for generations.

Ingredients
  

  • 2 lbs fresh rose hips 4 cups
  • 1 1/4 cup water
  • 1/2 cup sugar

Method
 

  1. Remove rose hip blossom ends, stems, and leaves, and rinse.
  2. Boil rose hips in a saucepan with water until tender (about 20 minutes).
  3. Mash the rose hips and weigh the pulp.
  4. Add 1 cup of sugar per pound (lb) of pulp.
  5. Bring to a boil, stirring frequently (about 10 minutes).
  6. Pour into sterilized jars to cool slightly.
  7. Seal jars in a hot water bath.
